Executive Pastry Chef

We are seeking a highly creative and experienced Executive Pastry Chef to lead the pastry operations of our premium specialty coffee concept in Doha, Qatar. The ideal candidate will be responsible for developing innovative, high-quality pastries and baked goods that complement our specialty coffee program while maintaining international standards of quality, hygiene, and profitability.

Key Responsibilities1. Menu Development & Innovation

  • Develop and execute signature pastries, viennoiserie, laminated dough products, artisan breads, cakes, and modern café desserts.
  • Create seasonal and limited-time offerings aligned with market trends in Qatar and GCC.
  • Ensure products complement espresso-based and specialty beverages.
  • Standardize recipes with accurate costing and yield control.

2. Operational Management

  • Oversee daily pastry production and ensure consistency across all branches (if applicable).
  • Monitor food cost, wastage, and inventory levels.
  • Coordinate procurement of high-quality ingredients from approved suppliers in Qatar.
  • Implement production planning to meet business demands (weekend and peak hours).

3. Quality & Brand Standards

  • Maintain premium presentation and taste standards aligned with the brand identity.
  • Conduct regular quality checks and product evaluations.
  • Ensure consistency across dine-in, takeaway, and delivery platforms.

4. Leadership & Team Development

  • Lead and supervise pastry chefs, commis, and bakery staff.
  • Provide training on advanced pastry techniques and food safety standards.
  • Conduct performance evaluations and build succession planning.
  • Foster a multicultural team environment.

5. Hygiene, Compliance & Safety

  • Ensure full compliance with Qatar Municipality regulations and food safety standards.
  • Implement and maintain HACCP procedures.
  • Maintain proper documentation for inspections.
  • Ensure workplace safety and proper equipment handling.

6. Business & Financial Control

  • Manage pastry kitchen budget and cost control.
  • Analyze sales performance and recommend new product strategies.
  • Support marketing campaigns and product launches.
  • Contribute to revenue growth through innovation and upselling strategies.

Qualifications & Requirements

  • Minimum 5–7 years’ experience in pastry leadership role (Executive/Head Pastry Chef).
  • Experience in specialty coffee shops, artisan bakeries, or premium café concepts.
  • Strong expertise in laminated dough, sourdough, viennoiserie, entremets, and modern desserts.
  • Experience in GCC market preferred.
  • Strong leadership and communication skills.
  • Knowledge of Qatar food safety regulations.
  • Ability to manage multi-branch operations is an advantage.

Education

  • Diploma/Degree in Culinary Arts or Pastry Arts.
  • Food Safety & Hygiene Certification (Level 2 or above preferred).
