Role Description

This is a full-time on-site role for a Cost and Sales Controller in Dubai. The role involves implementing cost control and improving controls on restaurant sales.


Key Responsibilities

Cost Monitoring & Control:

  • Track and control daily food and beverage costs, ensuring they align with company budget and financial goals.
  • Analyze food and beverage usage and consumption, identifying discrepancies or areas for improvement.
  • Monitor the efficiency of the kitchen, bar, and service operations in terms of cost control and wastage reduction.

Inventory Management:

  • Conduct regular inventory checks (physical counts) of all food and beverage items in coordination with warehouse and operation staff.
  • Reconcile inventory records and report variances between actual and theoretical stock levels.
  • Ensure accurate stock rotation (FIFO, First-In-First-Out) to minimize waste and spoilage.

Cost of Goods Sold (COGS) Analysis:

  • Monitor the COGS for both food and beverages, providing regular reports to senior management.
  • Perform analysis on portion control, pricing, and menu engineering to improve profitability.
  • Ensure the accurate application of recipes and portion sizes to prevent waste.

Vendor & Supplier Relations:

  • Collaborate with the procurement or purchasing department to negotiate prices with suppliers and ensure the best value for ingredients, packaging, and other supplies.
  • Monitor supplier delivery performance and costs to ensure compliance with pricing agreements.
