FNB Cost Controller

Job Title: F&B Cost Controller
Department: Finance
Location: Doha, Qatar
Reports To: Finance Manager

Job Summary:

The F&B Cost Controller is responsible for overseeing and managing the cost control functions within the food and beverage operations. This includes monitoring inventory, analyzing consumption, reducing waste, ensuring compliance with internal policies, and maximizing profitability. The ideal candidate must have solid experience in the F&B industry and a thorough understanding of cost control principles specific to hospitality operations.

Key Responsibilities:

  • Monitor and control all F&B costs across outlets.
  • Perform daily, weekly, and monthly inventory checks and reconcile variances.
  • Analyze consumption trends, waste reports, and product usage to optimize cost efficiency.
  • Prepare and review cost reports, sales vs. cost analysis, and profitability assessments.
  • Coordinate with procurement to ensure best pricing practices are followed.
  • Ensure proper documentation and coding of all F&B transactions in line with company policies.
  • Implement portion control measures and monitor compliance in kitchen and bar operations.
  • Conduct spot checks and surprise audits of inventory and receiving processes.
  • Verify supplier invoices and liaise with accounts for timely payments and reconciliation.
  • Work closely with the Culinary and Service teams to align on menu pricing and costing.
  • Assist in budgeting and forecasting for the F&B department.
  • Maintain up-to-date knowledge of food costs, market trends, and pricing strategies.

Requirements:

  • Minimum 3–5 years of experience in cost control within the F&B industry.
  • Degree in Accounting, Finance, Hospitality Management, or related field.
  • Strong knowledge of F&B operations, inventory control, and procurement procedures.
  • Familiarity with restaurant POS systems and cost control software.
  • Proficient in Microsoft Excel and accounting software.
  • Excellent analytical and organizational skills.
  • Strong attention to detail and accuracy.
  • Ability to work independently and collaboratively with cross-functional teams.

Preferred Skills:

  • Experience with inventory and procurement systems (e.g., FMC, Micros, Material Control).
  • Knowledge of HACCP, food safety, and hygiene standards.
  • Strong interpersonal and communication skills.
