Key Responsibilities
1. Beverage Management & Innovation
- Menu Development: In collaboration with the Brand Chef, design and update the beverage menu, including specialty coffees, mocktails, and seasonal drinks.
- Standardization (SOPs): Create and maintain detailed recipe cards, including precise measurements, preparation steps, and glassware/garnishing standards.
- Supplier Coordination: Liaise with coffee roasters and beverage suppliers to source high-quality ingredients while maintaining cost-effectiveness.
2. Quality Control (QC) & Auditing
- Branch Inspections: Conduct regular, unannounced quality audits across all branches to ensure compliance with COMO Lounge standards.
- Product Testing: Perform "blind" taste tests and visual checks on beverages at each branch to ensure consistency in flavor, temperature, and presentation.
- Hygiene & Maintenance: Audit the cleanliness of the bar areas and the maintenance schedules of critical equipment (espresso machines, grinders, chillers).
- Reporting: Submit weekly Quality Audit Reports to the Head of Operations, highlighting areas of excellence and branches requiring corrective action.
3. Training & Performance
- Barista Training: Lead the training and certification of all baristas and beverage service staff on SOPs, latte art, and technical equipment usage.
- Performance Monitoring: Identify "weak links" in beverage consistency and provide on-the-spot coaching to staff.
- New Branch Openings: Set up the beverage department and train the initial team for all future COMO Lounge locations.
4. Financial & Inventory Oversight
- Beverage COGS: Monitor beverage waste and inventory levels at each branch to ensure the Beverage Cost of Goods Sold remains within the targeted budget.
- Equipment Management: Manage the inventory of all bar tools and machinery, ensuring zero downtime through preventative maintenance.
Qualifications & Skills
- Experience: Minimum 3–5 years in a senior Barista or Beverage Manager role, ideally within a high-end cafe or lounge environment.
- Technical Expertise: Expert knowledge of specialty coffee, mixology, and beverage equipment.
- Auditing Skills: Previous experience in Quality Control (QC) or as a Head Trainer is highly preferred.
- Certification: SCA (required), HACCP , and or Food Safety Level 3 certification.
- Soft Skills: High attention to detail, strong communication skills, and the ability to be firm yet professional during audits.
Duty Hours and Conditions
- Public Holidays: Paid in accordance with UAE Labour Law.
- Time Off: One scheduled day off per week.
- Canceled Off: Any day off canceled due to operational necessity (at the request of the Head of Operations/Higher Ups) will be paid.
- Duty Hours: Flexible Duty based on the operational needs of the branches (including evenings, weekends, and holidays).
- Overtime: This is a management-level role; overtime is expected to be fulfilled without additional pay as the salary package is inclusive of the responsibilities required.

Pay: AED5,700.00 - AED7,000.00 per month
