The Kitchen Designer is responsible for designing functional, efficient, and compliant commercial kitchens for F&B outlets. The role involves space planning, BOH workflow optimization, equipment specification, coordination with consultants, and ensuring compliance with local authority regulations and landlord requirements.

Key Responsibilities

1. Concept & Planning

Develop commercial kitchen layouts based on brand concept and menu requirements.

Ensure proper workflow planning (receiving → storage → prep → cooking → pass → dishwashing).

Optimize BOH space utilization while maintaining operational efficiency.

Coordinate with operations team to validate functional requirements.

2. Technical Design

Prepare:

Kitchen layout drawings

Equipment layout & BOQ

MEP coordination drawings

Detailed shop drawings

Specify kitchen equipment aligned with budget and performance requirements.

Ensure compliance with:

Local municipality / food safety regulations

Civil Defense requirements

Landlord design guidelines

(In UAE context: DM / DCD / DEWA compliance as applicable)

3. Coordination

Coordinate with:

MEP consultants

Main contractors

Kitchen suppliers

Operations team

Project managers

Review shop drawings submitted by kitchen suppliers.

Attend design coordination meetings when required.

4. Budget & Cost Control

Prepare kitchen BOQ and cost estimates.

Value-engineer equipment without compromising operational efficiency.

Support procurement in supplier evaluation and technical comparison.

5. Execution Support

Conduct site visits during installation.

Review installation compliance with approved drawings.
