Lead Purchaser

The Role:

The Head Purchaser oversees all procurement for our full-service restaurant spaces, ensuring timely, cost-effective, and quality-focused sourcing of operational supplies. This role is responsible for maintaining accurate inventory levels, managing vendor relationships and supporting the back of house and front of house teams with access to products that align with the brand’s standards. The Head Purchaser ensures that purchasing practices support cost controls, sustainability goals, and compliance with local health and safety regulations. Must be able to work Monday-Friday, 8:00am-4:30pm

The Responsibilities:

Purchasing & Inventory Management

  • Source, order, and manage inventory of all food, beverage, and essential operational supplies including glassware and smallware’s, linens & laundry orders, bar N/A bev & equipment, kitchen prep equipment, and cleaning supplies
  • Maintain accurate par levels based on business trends and operational needs.
  • Work closely with the culinary and beverage teams to ensure timely and quality product deliveries.
  • Monitor product usage and reduce waste through effective stock rotation and weekly inventory of bar supplies, glassware, and smallware.
  • Managing receiver team, assist with package receiving and organization

Budgeting & Reporting

  • Submit detailed monthly spending reports that align with departmental budgets.
  • Track purchasing against established cost controls and identify areas for savings.
  • Ensure Invoices are correct and submit to finance team.
  • Collaborate with leadership to forecast and adjust monthly budgets based on seasonality, sales trends, and historical data.
  • Identify and present cost-saving opportunities without sacrificing quality.

Vendor & Supplier Management

  • Build and maintain strong relationships with suppliers to ensure reliability and competitive pricing.
  • Negotiate contracts and terms to benefit the financial health of the business.
  • Evaluate vendor performance regularly and introduce alternatives when needed.

Strategic Seasonal Planning

  • Adjust ordering patterns and inventory levels in slower business periods (e.g., summer months) to overspending and product usage
  • Work with the management team to implement cost-effective alternatives during low-profit periods

Qualifications:

  • Bachelor’s degree in Supply Chain Management, Business Administration, Hospitality Management, or a related field (preferred).
  • 3+ years of purchasing or procurement experience in the hospitality or restaurant industry.
  • Proven experience managing budgets, cost controls, and monthly spend reporting.
  • Demonstrated ability to source, order, and manage a wide range of products, including food, beverages, smallwares, and operational supplies.
  • Excellent vendor negotiation skills with a track record of building and maintaining strong supplier relationships.
  • Familiarity with local health and safety regulations and sustainability-focused purchasing practices.
  • Highly organized with exceptional attention to detail and the ability to manage multiple priorities.
  • Strong communication and collaboration skills to work effectively with culinary, beverage, finance, and leadership teams.
  • Leadership or supervisory experience managing receiving or inventory staff is a plus.
