Job Summary: We are seeking a dedicated and creative Pastry Chef de Partie to join our high-end kitchen team. The Pastry Chef de Partie will be responsible for a specific section of the pastry kitchen, executing all sweet preparations, ensuring the highest standards of quality and consistency are maintained, and contributing to the development of new dessert concepts.
Responsibilities:
- Take full ownership and responsibility for the designated pastry station (garde manger, entremets, sauces, etc.), ensuring its smooth and efficient operation.
- Precisely execute and consistently deliver all established pastry and dessert recipes, ensuring adherence to taste, presentation, and portion control standards.
- Manage daily mise en place, including preparing doughs, batters, fillings, decorations, ice creams, and other components according to production schedules.
- Diligently monitor the quality of all ingredients and final products, immediately reporting any issues to the Head Pastry Chef.
- Assist with inventory checks, stock rotation (FIFO), and the accurate receiving and storing of perishable goods to minimize waste and spoilage.
- Actively contribute creative ideas and sample preparations for seasonal menus, specials, and custom orders.
- Demonstrate advanced skills in intricate dessert decoration, plating techniques, and finishing touches required for luxury service.
- Maintain impeccable standards of hygiene, cleanliness, and organization within the pastry section, strictly following all HACCP and local health regulations.
- Operate, maintain, and clean all specialized pastry equipment (mixers, ovens, sheeters, freezers) correctly and safely.
- Coordinate closely with the service staff during busy periods to ensure accurate and timely fulfillment of dessert orders.
- Provide guidance and training to Commis Chefs or junior staff within the pastry section.
- Be mindful of ingredient costs, standard portion sizes, and efficient preparation methods to support kitchen profitability.
- Demonstrate flexibility and the ability to work long hours, including weekends and holidays, in a high-pressure, fast-paced kitchen environment.
- Maintain accurate records of batch sizes, recipe yields, and production logs as required by management.
- Stay updated on current global pastry trends, techniques, and innovative ingredients relevant to the luxury food industry.
Qualifications:
- Can speak English well, and Arabic (preferred)
- Prior experience in a pastry kitchen or bakery is required.
- Basic understanding of pastry techniques and ingredients. Strong attention to detail, ability to follow instructions, and willingness to learn. Ability to work in a fast-paced environment and maintain composure under pressure.
- Ability to stand for extended periods, lift and carry moderate weights, and work with hot ovens and kitchen equipment.
