We are looking for qualified specialty chefs who have mastered the culinary arts in Japanese cooking. The specialty chefs have a real passion for food and a vast knowledge. They keep ahead of trends and food styles. They love creating new dishes and constantly want to exceed expectations.

JOB LOCATION: FUJAIRAH, UAE

QUALIFICATIONS & EXPERIENCE:

  • 4-year culinary degree or equivalent formal culinary training - MANDATORY
  • Level 3 - Food Hygiene & Safety (Supervisors)
  • Level 2 – Allergy Awareness
  • Level 2 – HACCP
  • Safe Chemical Handling
  • Private chef experience in a VVIP household preferred
  • Experience in a 5* Hotel or a high-level restaurant or Michelin Star Restaurant or Private Residence MANDATORY
  • International living and working essential MANDATORY
  • Has worked in teams with more than 6 chefs, the ability to work on your own and as part of a team
  • Must have a proven CV for their positions over a period of time i.e.; progressed up the ranks - not started in a kitchen and 12 months later is an executive chef with no formal training.

JOB DESCRIPTION

  • Excellent knowledge of Japanese cuisine.
  • Strong and proven knowledge of cooking philosophies and principles.
  • Exceptional creativity and presentation of food
  • Check the quality of raw or cooked food products to ensure that standards are met.
  • Advanced HACCP certification
  • Introduce and present new trial dishes
  • Inspect supplies, equipment, or work areas to ensure conformance to established standards.
  • Determine how food should be presented and create decorative food displays for events and functions.
  • Record keeping – recipe books, guest preferences, and other operational data.
  • Advanced menu planning - collaborate with other chefs to plan and develop recipes or menus, taking into account such factors as seasonal availability of ingredients and produce.
  • Ability to explain your dish to F&B service staff.
  • Demonstrate new cooking techniques to junior chefs
  • Arrange for equipment purchases or repairs.
