The Senior Chef de Partie – Bakery is responsible for overseeing daily bakery production, ensuring high-quality products, maintaining consistency, and supporting the team in delivering exceptional baked goods. The role includes supervising junior staff, contributing to menu development, and ensuring compliance with food safety and company standards.
Key Responsibilities1. Production & Operations
- Lead the preparation and production of all bakery items, including breads, rolls, pastries, and specialty products.
- Ensure consistency, quality, and presentation standards are always met.
- Assist in developing and testing new bakery recipes and menu items.
- Monitor baking processes and adjust as needed for quality output.
- Ensure correct mise en place is completed daily.
2. Team Supervision & Training
- Supervise and guide Commis, Bakers, and junior staff in daily tasks.
- Provide hands-on training to improve skills, efficiency, and product quality.
- Delegate tasks effectively and ensure team members follow SOPs.
- Support a positive, respectful, and collaborative team environment.
3. Quality & Hygiene Control
- Ensure all bakery operations follow HACCP, hygiene, and food safety standards.
- Maintain cleanliness and organization of all bakery work areas, equipment, and storage.
- Monitor product freshness, rotation, and waste control.
4. Inventory & Cost Management
- Assist in monitoring stock levels of ingredients and packaging materials.
- Report shortages and damaged items to the Chef or Storekeeper.
- Support cost-saving initiatives without compromising quality.
- Reduce wastage through proper planning and production forecasting.
5. Coordination & Communication
- Coordinate with the Head Chef, Sous Chef, and Pastry Chef regarding production needs.
- Ensure smooth workflow between bakery, pastry, and kitchen teams.
- Attend team briefings and communicate updates to junior staff.
Qualifications & Requirements
- Minimum 4–6 years of bakery experience, including at least 2 years as Chef de Partie or Senior Baker.
- Strong knowledge of bread-making, dough fermentation, artisan baking, and pastry basics.
- Ability to lead a team with professionalism and positive attitude.
- Excellent time management, organization, and attention to detail.
- Knowledge of food safety standards (HACCP).
- Ability to work in a fast-paced environment and handle multiple tasks.
