Senior Operations Manager – Factory | Cloud Kitchens | Restaurant Outlets
Location: Pune
Company: Trijya Foods & Beverages LLP | TCG Hospitality
Reports To: Managing Director
Experience: 8–15 Years in Operations | Preferably from Mid-sized Organizations
About the Role
We are seeking a hands-on Senior Operations Manager who can build, stabilize, and scale operations from the ground up — not just manage what already exists.
The candidate will oversee end-to-end operations across our Factory (Central Kitchen), Cloud Kitchens, and Offline Restaurant Outlets, ensuring efficiency, structure, and accountability at every level.
This position is ideal for a builder — someone who thrives in entrepreneurial environments, understands the challenges of mid-sized setups, and can establish systems that drive sustained growth.
You will work directly with the Managing Director and play a key role in strengthening the operational backbone of our growing F&B ecosystem.
Key ResponsibilitiesA. Factory & Production Operations
- Oversee daily production, packaging, and dispatch from the central kitchen.
- Build and implement efficient systems for procurement, inventory, and logistics.
- Track production targets, minimize wastage, and ensure on-time delivery.
- Maintain high standards of quality, hygiene, and safety across the factory.
- Identify inefficiencies and introduce process improvements through data-driven methods.
B. Cloud Kitchen Operations
- Manage daily operations for multiple cloud kitchens across locations.
- Ensure adherence to SOPs in food preparation, packaging, and dispatch.
- Plan manpower and resource allocation effectively.
- Monitor KPIs such as order volume, delivery time, and customer satisfaction.
- Coordinate with marketing and menu development teams for smooth rollouts and performance monitoring.
C. Offline Restaurant & Outlet Operations
- Supervise outlet managers to ensure consistency in service and quality.
- Conduct operational audits for hygiene, customer experience, and process compliance.
- Oversee sales reporting, P&L performance, and cost management.
- Coordinate the flow of supplies and inventory between the factory and outlets.
- Ensure adherence to defined KRAs and maintain accountability across teams.
D. Strategic & Administrative Responsibilities
- Create and monitor KRA/KPI systems across all business verticals.
- Implement task and project tracking using tools such as Asana, ClickUp, or Trello.
- Develop and review operational dashboards and MIS reports weekly and monthly.
- Work closely with HR, Finance, and Procurement teams to ensure smooth inter-departmental coordination.
- Support the Managing Director in planning and executing expansion strategies and operational scaling.
People & Leadership
- Lead and motivate multi-location teams across the factory, cloud kitchens, and outlets.
- Build a culture of discipline, accountability, and high performance.
- Mentor mid-level managers and strengthen on-ground leadership.
- Establish structured feedback systems and ensure consistent performance reviews.
- Maintain a hands-on approach to problem-solving and decision-making.
Who You Are
- A builder and doer, not just a manager — with experience in setting up or scaling businesses from scratch in mid-sized companies or startups.
- Detail-oriented, process-driven, and disciplined in execution.
- Experienced in managing factory, kitchen, and retail operations simultaneously.
- Strong at resource planning, people management, and structured problem-solving.
- Tech-savvy with proficiency in Excel, MIS systems, and modern task-tracking tools.
- Capable of balancing on-ground agility with strategic thinking.
- A lifelong learner with the ability to adapt quickly and handle dynamic environments.
Qualifications
- Bachelor’s degree in Management, Engineering, or Operations (mandatory).
- MBA or Postgraduate degree preferred.
- 8–15 years of experience in operations, manufacturing, FMCG, or retail (non-hospitality).
- Proven experience in setting up new units, plants, or business verticals.
Performance Metrics (KPIs)
- Production efficiency and dispatch accuracy.
- Wastage and stock variance reduction.
- Outlet and kitchen uptime and performance ratings.
- Compliance with SOPs and audit scores.
- Achievement of KRAs across business units.
- Implementation of process improvement and cost optimization measures.
What We Offer
- Competitive CTC with quarterly performance-based incentives.
- Leadership role with direct visibility to the Managing Director.
- Opportunity to build scalable operational systems across multiple business verticals.
- Fast-track career growth toward Head of Operations / COO based on performance and outcomes.
Culture Fit
We are a growing, entrepreneurial organization — not a corporate structure.
We value discipline, ownership, innovation, and long-term commitment.
If you enjoy building systems from scratch, leading teams with accountability, and creating measurable impact — this is the place for you.
Important Note
Please read this JD very carefully before applying.
We are specifically looking for candidates who have experience in mid-sized organizations, are hands-on with operations, and have built or scaled setups from the ground level.
Applicants from large corporate environments with purely administrative experience may not fit this role.
