Slaughterhouse Engineer

1. Preventive and Routine Maintenance

- Planning and Execution: Develop and implement scheduled preventive and routine maintenance programs for all slaughterhouse equipment and machinery, including pumps, conveyor belts, processing equipment, and refrigeration systems.

- Maintenance Program Management: Develop predictive and preventive maintenance programs for slaughtering, cutting, refrigeration, waste treatment, and packaging systems.

- Spare Parts Management: Monitor and manage inventory of spare parts and consumable materials, and submit purchase requests in a timely manner to ensure availability and avoid production downtime.

2. Emergency Response and Breakdown Management

- Immediate Response: Handle emergency situations and unscheduled breakdowns promptly and effectively to minimize downtime.

- Problem Diagnosis: Diagnose mechanical, electrical, hydraulic, and automation system faults, identifying root causes and implementing repairs.

- Failure Analysis: Conduct root cause analysis for recurring failures and propose permanent solutions to prevent reoccurrence.

3. Critical Systems

- Refrigeration Systems: Oversee the maintenance and monitoring of ammonia and refrigerant-based cooling systems to ensure appropriate temperature and humidity levels for meat storage, including compressors, condensers, evaporators, chill rooms, and freezer rooms.

- Utilities and Infrastructure: Supervise the operation and maintenance of boilers, compressed air systems, water supply, steam systems, and wastewater treatment plants.

Section Two: Compliance and Food Safety (Core Responsibilities)

4. Compliance with Local Regulations

- UAE Standards: Ensure all operations and equipment fully comply with municipal and environmental regulations in the UAE, as well as local food safety standards such as UAE.S 2055-2 and the requirements of regulatory authorities.

- Hygiene Practices: Oversee the implementation of general hygiene practices in the slaughterhouse in accordance with the hygiene practice guidelines issued by the competent authorities.

5. Food Safety Systems

- HACCP Implementation: Supervise the implementation of the Hazard Analysis and Critical Control Points (HACCP) system and Good Manufacturing Practices (GMP) to ensure the production of safe meat products.

- Control Point Verification: Ensure regular verification of Critical Control Points (CCPs) and Operational Prerequisite Programs (OPRPs) according to established schedules.

- International Standards Compliance: Ensure compliance with requirements of ISO 22000, FSSC 22000, ISO 9001, and other accredited systems.

6. Occupational Health, Safety, and Environment

- Health and Safety Standards: Implement occupational health and safety standards such as COSHH, conduct risk assessments, and implement safe work systems in a high-risk environment.

- Environmental Safety: Manage waste and ensure compliance with environmental regulations, including refrigerant monitoring and adherence to environmental legislation.

- Incident Investigation: Lead investigations into safety incidents related to equipment or facilities and implement corrective actions.

Section Three: Management and Leadership

7. Team Management

- Supervision of Technicians: Supervise maintenance teams and technicians (mechanical, electrical, plumbing, welding) and assign tasks accordingly.

- Training and Development: Train and develop team competencies to enhance performance, safety, and compliance with standards.

- Technical Guidance: Provide technical guidance and mentorship to engineers and maintenance teams, fostering a culture of safety and innovation.

8. Continuous Improvement

- Performance Analysis: Analyze equipment performance and productivity data to identify areas for improvement.

- Improvement Initiatives: Lead continuous improvement initiatives to increase productivity, reduce waste, and improve energy efficiency across all operational stages.

- Automation and Efficiency: Lead on-site automation, energy efficiency, and waste reduction projects.

9. Project Management

- Capital Projects: Plan and execute capital projects, including equipment upgrades, production line expansions, and facility improvements.

- Budget Preparation: Prepare project scopes, budgets, timelines, and return on investment analyses.

- Contractor Management: Supervise contractors and suppliers during maintenance activities and project implementations.

Section Four: Administrative Tasks and Reporting

10. Documentation and Reporting

- Technical Reports: Prepare detailed technical reports on mechanical system performance, maintenance activities, breakdown incidents, and corrective actions taken.

- Maintenance Records: Maintain accurate records of mechanical and electrical maintenance activities and spare parts inventory.

- Compliance Documentation: Prepare audit reports and compliance documentation for standards and regulatory requirements.

11. Coordination and Communication

- Interdepartmental Coordination: Work closely with production, quality control, environmental, and safety teams to ensure operational objectives and compliance requirements are met.

- External Communication: Liaise with suppliers, contractors, and regulatory authorities as needed.

Section Five: UAE-Specific Experience Requirements

Given the requirement of no less than 6 years of experience in the UAE, the following additional responsibilities and competencies are essential:

- Knowledge of Local Regulations: In-depth knowledge of municipal laws and food regulatory authorities in each emirate.

- Dealing with Regulatory Bodies: Proven experience in dealing with regulatory inspectors and competent authorities in the UAE.

- Understanding of Islamic Requirements: Comprehensive understanding of Halal slaughter requirements in accordance with standards approved in the UAE.

Section Six: Language Requirements

12. Bilingual Proficiency

- Arabic Language: Full professional proficiency in Arabic (both written and spoken) for effective communication with local authorities, regulatory inspectors, and Arabic-speaking team members, as well as for preparing official documentation and reports in Arabic.

- English Language: Full professional proficiency in English (both written and spoken) for communication with multinational teams, international suppliers, preparation of technical reports, and compliance with international standards documentation.
