Key Responsibilities:
- Prepare, bake, and decorate all Western desserts—including cakes, pastries, tarts, mousses, cookies, and specialty sweets.
- Develop and innovate new Western dessert menu items while maintaining consistency and quality.
- Ensure all desserts meet the restaurant/hotel’s standards for taste, presentation, and portion size.
- Monitor and maintain stock levels of pastry ingredients; assist with inventory and ordering.
- Ensure proper storage, handling, and rotation of all ingredients to minimize waste.
- Decorate desserts with Western techniques (e.g., glazing, piping, chocolate work, sugar decorations).
- Maintain cleanliness and hygiene within the pastry section, following HACCP and safety protocols.
- Coordinate with the Executive Chef/Sous Chef to plan menus, seasonal offerings, and special event desserts.
- Train and guide junior staff and commis pastry chefs.
- Ensure timely production during service hours and special events.
- Conduct quality checks on all products before service.
Skills & Qualifications:
- Proven experience as a Pastry Chef, Western Dessert Chef, or similar role.
- Strong knowledge of Western pastry techniques: baking, chocolate work, doughs, creams, glazes, and plating.
- Creativity and an eye for detail in dessert design and presentation.
- Knowledge of global Western dessert trends and modern pastry styles.
- Ability to follow recipes accurately and maintain consistency.
- Excellent time-management and organizational skills.
- Ability to work under pressure during peak hours.
- Culinary or pastry degree/certification (preferred).
- Knowledge of food safety standards and HACCP.
