Job Purpose
To support effective control of Food & Beverage costs by ensuring accurate inventory management, invoice verification, portion control, and strict compliance with established procurement, receiving, and stock control procedures across all F&B outlets and central stores.
Key Responsibilities
- Review and verify daily Food & Beverage invoices, ensure accurate data entry, and submit invoices for approval through the NAV system.
- Conduct daily inventory checks by comparing stock levels against sales reports to identify and investigate variances.
- Perform weekly physical spot checks at restaurants and outlets and reconcile findings with sales data.
- Participate in monthly stock counts for:
- Main Store (Food, Beverage, and General Items)
- Kitchens and all F&B outlets
- Monitor and report non-moving, slow-moving, and near-expiry stock items, with particular focus on items expiring within the next three months.
- Verify that all invoices are supported by approved Local Purchase Orders (LPOs), ensuring pricing, quantities, and specifications match purchase orders.
- Cross-check invoices against Goods Receiving Notes (GRNs) and ensure all documents are properly stamped and signed by authorized personnel.
- Conduct regular spot checks in the receiving area to confirm:
- Accuracy and calibration of weighing scales
- Quality and specification compliance of received goods
- Ensure that no materials are issued from stores without an approved requisition or proper authorization from the respective Department Head.
- Monitor supplier deliveries to ensure adherence to delivery schedules and prevent overstocking, particularly during month-end.
- Monitor and enforce portion control standards in coordination with Chefs, ensuring compliance with approved menu recipes and cost calculations.
- Perform periodic butcher yield tests on major items such as meat, poultry, and seafood to ensure standard yields are maintained.
- Regularly review and update recipe costing to reflect accurate cost prices and ingredient changes.
- Assist with daily and ad-hoc stock counts at restaurants and outlets as required.
Key Skills & Competencies
- Strong understanding of Food & Beverage cost control principles
- Sound knowledge of inventory management and stock reconciliation
- Familiarity with ERP systems (NAV preferred)
- High attention to detail and numerical accuracy
- Ability to coordinate effectively with Chefs, Procurement, Receiving, Operations, and Finance teams
- Strong compliance mindset and documentation discipline
What We Are Looking For
- 2–3 years of relevant experience in Food & Beverage Cost Control, preferably within hospitality, catering, or multi-outlet restaurant operations
- Strong working knowledge of inventory control, invoice verification, stock takes, and cost analysis in an F&B environment
- Arabic language skills preferred to support coordination with suppliers and operational teams (not mandatory)
- Immediate availability or a short notice period is highly preferred
- Ability to work independently while coordinating effectively with Chefs, Operations, Procurement, and Finance teams
- High level of accuracy, integrity, and attention to detail in cost control and documentation
