Stewarding Operations Management
- Supervise and coordinate daily stewarding activities across all restaurants in the group.
- Oversee cleaning schedules for kitchen equipment, utensils, dishwashing areas, and back-of-house facilities.
- Monitor stewarding staff performance and ensure compliance with SOPs.
- Plan and schedule deep-cleaning activities during off-peak hours.
2. Food Safety, Hygiene & Compliance
- Ensure strict adherence to Dubai Municipality food safety regulations and company hygiene standards.
- Implement and monitor HACCP procedures and cleaning protocols across all locations.
- Conduct regular internal audits and hygiene inspections to identify and resolve non-compliance issues.
- Maintain hygiene logs and documentation for inspections and audits.
3. Grease Trap Management
- Develop and maintain a preventive maintenance schedule for grease traps across all outlets.
- Conduct or oversee regular inspections and cleaning of grease traps in compliance with Dubai Municipality requirements.
- Coordinate with external service providers for grease trap cleaning, waste disposal, and documentation.
- Maintain inspection and cleaning records for all grease traps to present during audits.
4. FoodWatch Compliance
- Ensure all food safety documentation is uploaded and maintained in the FoodWatch system.
- Collaborate with outlet managers and hygiene officers to ensure all restaurants are compliant with FoodWatch standards.
- Prepare for and coordinate FoodWatch audits and Dubai Municipality inspections.
- Stay updated with FoodWatch regulatory changes and ensure timely implementation across outlets.
5. Inventory & Cost Control
- Monitor stock levels of cleaning supplies, tools, and chemicals; prepare purchase requests when required.
- Ensure proper usage of cleaning agents to reduce waste and control costs.
- Track and manage stewarding-related expenditures within approved budgets.
6. Leadership & Staff Training
- Recruit, train, and manage stewarding team members across the restaurant group.
- Conduct regular training on hygiene, sanitation practices, and use of cleaning chemicals and equipment.
- Promote a strong safety and hygiene culture throughout the team.
7. Equipment Maintenance & Safety
- Ensure all stewarding and dishwashing equipment is in good working order.
- Report maintenance issues promptly and follow up with engineering or contractors.
- Monitor the safe handling and storage of cleaning chemicals and supplies.

Pay: AED6,500.00 - AED10,000.00 per month
