The Commis I – Sushi supports the sushi kitchen in the preparation and presentation of sushi and Japanese cuisine within a luxury hotel environment. The role demands precision, discipline, and strict adherence to the highest standards of quality, hygiene, and presentation expected in a five-star setting.
Key Responsibilities
- Assist senior sushi chefs in preparing sushi, sashimi, nigiri, rolls, and other Japanese dishes
- Prepare ingredients including fish, seafood, rice, vegetables, and garnishes according to established standards
- Follow standardized recipes, proper knife techniques, and presentation guidelines
- Ensure mise en place is completed accurately and on time to support smooth service
- Maintain cleanliness, organization, and proper maintenance of the sushi station and equipment
- Comply strictly with food safety, hygiene, and HACCP standards, with particular attention to raw fish handling
- Ensure proper storage, labeling, and rotation of seafood and other ingredients
- Support efficient kitchen operations during service periods
- Work collaboratively with the sushi team and other kitchen sections
- Participate in ongoing training and skill development in Japanese culinary techniques
Skills & Experience
- Previous experience as a Commis I – Sushi or in a similar role within a luxury hotel or high-end Japanese restaurant
- Basic knowledge of sushi preparation, knife skills, and Japanese ingredients
- Culinary or Japanese cuisine certification preferred, or equivalent professional experience
- Food Safety and Hygiene certification (or willingness to obtain)
- Understanding of seafood quality, freshness control, and proper handling
- Ability to work in a fast-paced, detail-oriented environment
- Strong communication and teamwork skills
