Below are the key responsibilities for this role in a restaurant or food chain commissary (central kitchen):
*1. Production Management*
- Plan and supervise daily production of food items (Marination, sauces, ordering , prep items, etc.).
- Ensure production meets branch demand and sales forecasts.
- Maintain standard recipes and portion control.
- Monitor product quality, taste, and consistency.
*2. Meat & Raw Material Control*
- Supervise meat receiving, cutting, cleaning, and storage.
- Ensure proper temperature control and cold storage management.
- Maintain FIFO / FEFO stock rotation system.
- Monitor raw material quality and supplier standards.
*3. Hygiene & Food Safety*
- Ensure strict cleanliness and sanitation standards in the commissary.
- Implement food safety procedures (HACCP standards).
- Monitor staff personal hygiene and kitchen sanitation.
- Ensure proper waste disposal and pest control.
*4. Inventory & Stock Management*
- Manage daily inventory of raw materials and finished products.
- Prevent wastage, spoilage, and overstocking.
- Maintain proper stock records and consumption reports.
- Coordinate with procurement department for purchasing.
*5. Staff Management*
- Supervise commissary staff, and production workers.
- Assign daily tasks and production schedules.
- Train staff on SOPs, hygiene, and food preparation standards.
- Ensure discipline and productivity of the team.
*6. Quality Control*
- Ensure all products meet brand quality standards.
- Conduct regular quality checks before dispatch.
- Maintain consistent product specifications across branches.
*7. Dispatch & Distribution*
- Coordinate packing and dispatch of products to branches.
- Ensure products are delivered on time and in proper condition.
- Monitor logistics and delivery schedules.
*8. Reporting & Compliance*
- Prepare daily and weekly production reports.
- Monitor cost control and wastage reports.
- Ensure compliance with company SOPs and health regulations.
Pay: From Rs200,000.00 per hour
Expected hours: 9.0 per week
