Legacy Talent Search is currently seeking candidates for a Control Room Operator Mechanic role in Firebaugh. - Operate two or more control room systems (Hot Breaks, Evaporators, Flash Cooler) to ensure steady, efficient production.
- Perform Clean-in-Place (CIP) procedures and operate machinery in accordance with Standard Operating Procedures (SOPs).
- Support evaporation equipment overhauls and execute preventive maintenance tasks (AMMS).
- Align pumps and motors as part of ongoing system performance.
- Assist Control Room Lead with daily operations and team coordination.
- Monitor moisture levels, temperatures, and product specifications to ensure compliance with Manufacturing Standard Practices (MSP).
- Record accurate data in production log sheets and documentation systems.
- Participate in equipment teardown, inspection, and maintenance of key process areas, including Hot Break, Juice Tank, Finisher, and Evaporation systems.
- Execute change-out procedures for nitrogen tanks supplying cold hold tanks.
- Maintain sanitation in and around control room systems, working closely with Sanitation Department.
- Transport samples to the lab and adhere to QA testing protocols.
- Assist in training new personnel and participate in pre-season equipment and operations training.
- Contribute to SOP review and development.
- Collaborate in safety tailgate meetings and support all programs outlined in the Food Safety and Quality Management System.
- Provide thorough shift pass-downs and support team members across breaks and operational needs.
- Perform additional tasks as assigned by leadership.
- High school diploma or GED required.
- Minimum 1 year of experience in a production or control room environment (food industry preferred).
- Strong mechanical aptitude and comfort with troubleshooting and basic fabrication tools (manual, electric, and pneumatic).
- Familiarity with operating technical equipment such as thermocouple thermometers, Process Sensors (MCT 600), and digital stopwatches.
- Forklift certification or willingness to obtain.
- Ability to operate using production-related software and control interfaces.
- Able to work independently while contributing to a collaborative team environment.
- Ability to lift up to 50 lbs occasionally.
- Frequent standing, climbing, reaching, and bending.
- Occasional kneeling and crouching.
- Must have close and distance vision, color perception, and ability to detect product irregularities.
- Frequent use of hands for adjusting controls and operating machinery.
- Work in a warm, humid, and noisy environment—PPE is required.

$23.97, with a 2nd shift differential of $.50 and a 3rd shift differential of $1.00
