Cost Controller

Doha, Qatar

The Cost Controller is responsible for overseeing and managing all cost-related activities in the F&B and hospitality operations. This includes monitoring food and beverage costs, analyzing variances, managing inventory, supporting budgeting processes, and implementing cost control strategies to optimize profit margins and ensure operational efficiency.

Key Responsibilities:

1. Cost Monitoring & Control

  • Monitor daily food and beverage costs and report any significant variances.
  • Track and analyze cost of goods sold (COGS) for all outlets.
  • Maintain and update recipe costing and ensure portion control standards are adhered to.
  • Review wastage, pilferage, and spoilage and recommend corrective actions.

2. Inventory Management

  • Supervise monthly physical inventory counts and reconcile discrepancies.
  • Ensure proper storage, issuance, and rotation of inventory.
  • Coordinate with storekeepers and kitchen staff for inventory accuracy.
  • Monitor par stock levels and consumption trends to avoid overstocking/understocking.

3. Procurement & Supplier Coordination

  • Work with the procurement team to ensure cost-effective purchasing while maintaining quality standards.
  • Evaluate supplier quotations and ensure compliance with pricing agreements.
  • Monitor purchase orders against inventory movements and usage.

4. Financial Analysis & Reporting

  • Prepare daily, weekly, and monthly cost reports for management review.
  • Analyze financial data and recommend cost reduction strategies.
  • Assist in budget preparation, forecasting, and financial planning.
  • Perform menu engineering and profitability analysis.

5. Compliance & Internal Controls

  • Ensure adherence to local regulations, HACCP, and internal cost control policies.
  • Conduct internal audits on procurement, inventory, and kitchen controls.
  • Develop and implement SOPs for cost control and inventory management.

Qualifications:

  • Bachelor’s degree in Accounting, Finance, Hospitality Management, or a related field.
  • 3–5 years of experience in cost control in hospitality, F&B, or retail, preferably in Qatar.
  • Strong knowledge of food and beverage operations and inventory management systems.
  • Proficiency in ERP systems and POS integration.
  • Advanced Excel and data analysis skills.

Job Type: Full-time

Pay: QAR4,500.00 - QAR6,000.00 per month
