The dumpling chef specializes in the preparation, crafting, and steaming of Dumplings, ensuring consistency in taste, texture, and presentation. This role requires precision, skill, and adherence to traditional techniques while maintaining hygiene and kitchen efficiency in fine dining setting.

Key Responsibilities

  • Prepare dumpling dough with the correct texture, elasticity, and consistency.
  • Mix and season meat fillings, ensuring the correct balance of Flavors.
  • Prepare and incorporate soup gelatine for the signature soup-filled dumplings.
  • Hand-roll and cut dumpling dough to precise sizes.
  • Skilfully pleat dumpling with the required number of folds for a consistent and authentic appearance.
  • Maintain quality control on uniformity, ensuring dumplings are properly sealed to retain soup inside.
  • Work closely with the kitchen team to meet high-volume demands while maintaining quality.
  • Assist in training junior chefs or kitchen staff in dumpling making techniques.
  • Communicate with chefs and service staff to ensure smooth kitchen operations.

Physical Working Conditions:

  • Long hours of standing and repetitive hand movements (dough rolling, folding).
  • Exposure to heat and steam from kitchen equipment.
  • Fast paced and high-pressure kitchen environment.
  • Ability to lift heavy ingredients and equipment when required.
  • Flexibility to work evenings, weekends, and public holidays.

Qualifications/Requirements:

  • High school diploma or equivalent.
  • Culinary certification or specialized training in dumpling-making (preferred).
  • Food Safety & Hygiene Certification (HACCP preferred).
  • 2-5 years of experience in a professional kitchen, with a strong focus on dumpling or dim sum preparation.
  • Experience in a fine dining or high-volume Asian restaurant is preferred.
  • Expertise in dumpling folding techniques with precision and speed.
  • Strong knife skills and dough handling experience.
  • Ability to maintain consistency in size, shape, and presentation.
  • Attention to detail, patience, and ability to work in a fast-paced kitchen.
