Job Title:

Cost Controller – Hospitality & Food Services

Job Summary:

The Cost Controller is responsible for monitoring and controlling all cost-related activities within the hospitality or food service operation. This includes verifying purchases, receiving, storage, consumption, pricing, and waste. The role works closely with the Purchasing, Stores, Production, and Finance departments to ensure accurate cost management, minimize losses, and improve overall profitability in line with industry standards.

Key Responsibilities:

  • Monitor all food and beverage costs and ensure accuracy in materials, pricing, and consumption.
  • Review supplier invoices and verify prices and quantities against purchase orders.
  • Track daily stock movements and prepare reports on variances, wastage, and spoilage.
  • Prepare daily, weekly, and monthly cost reports for management.
  • Conduct recipe costing and update cost cards based on current market prices.
  • Monitor production and storage waste levels and propose corrective actions.
  • Collaborate with the Executive Chef to determine standard costs for new recipes.
  • Review receiving and issuing processes and ensure all entries are correctly recorded in the system.
  • Conduct monthly inventory counts and prepare variance analysis reports.
  • Assist in monitoring labor costs related to production when required.
  • Prepare financial cost reports such as:
  • Cost of Goods Sold (COGS)
  • Food Cost %
  • Beverage Cost %
  • Variance Reports
  • Support in developing and implementing cost control policies and procedures.
  • Ensure compliance with food safety and hygiene standards in relation to storage and handling.

Required Qualifications:

  • Bachelor’s degree in Accounting, Business Administration, or a related field.
  • Minimum 3–5 years of experience in hospitality or food service (F&B industry).
  • Strong experience in Recipe Costing, Menu Engineering, and Inventory Control.
  • Proficiency in ERP systems and POS platforms.
  • Advanced Excel skills (Pivot Tables, VLOOKUP, formulas, cost modeling).
  • Strong understanding of purchasing, storage, and inventory procedures.
  • Excellent analytical skills with high attention to detail.
  • Ability to work under pressure and meet deadlines.
