Job Title: F&B Cost Controller
Job Summary
The F&B Cost Controller is responsible for monitoring, analyzing, and controlling food and beverage costs to ensure profitability, accurate costing, and effective inventory management. The role works closely with Finance, Procurement, and F&B Operations to maintain cost efficiency and internal controls.
Key Responsibilities
- Monitor and control food & beverage costs in line with approved budgets and targets
- Calculate and analyze food cost, beverage cost, and gross profit margins
- Prepare daily, weekly, and monthly F&B cost reports and variance analysis
- Review purchase orders, supplier invoices, and pricing for accuracy
- Conduct regular inventory counts (daily spot checks, weekly/monthly stock takes)
- Monitor wastage, spoilage, breakages, and pilferage; investigate variances
- Ensure proper recipe costing, portion control, and menu costing
- Coordinate with Chefs, F&B Managers, Stores, and Purchasing departments
- Monitor FIFO, stock rotation, expiry dates, and storage standards
- Ensure compliance with internal controls, SOPs, and audit requirements
- Support budgeting, forecasting, and menu engineering activities
- Maintain accurate records for internal and external audits
Qualifications & Requirements
- Bachelor’s degree in Accounting, Finance, Hospitality Management, or related field
- Minimum 4-6 years of experience as an F&B Cost Controller or similar role
- Strong knowledge of food & beverage costing and inventory control
- Experience with POS systems, inventory, and ERP software
- Advanced MS Excel skills (cost analysis, reports, variance tracking)
- High attention to detail and strong analytical skills
- Ability to work under pressure in a fast-paced F&B environment
