The Sous Chef - Pastry assists the Executive Pastry Chef in overseeing all pastry and bakery operations, ensuring the highest standards of quality, presentation, and service. This role is responsible for leading the pastry team in producing a variety of desserts, breads, and specialty items that reflect creativity and excellence while maintaining consistency and cost control.

Your day to day

• Supervise day-to-day pastry and bakery operations, ensuring smooth production and timely delivery for all outlets, buffets, and banquets.

• Support the Executive Pastry Chef in menu planning, recipe development, and presentation of desserts and pastries.

• Ensure that all products meet hotel standards for quality, taste, and appearance.

• Train, motivate, and guide the pastry team to achieve operational excellence and maintain high morale.

• Monitor and maintain proper inventory levels; oversee requisition and cost control.

• Enforce food safety, hygiene, and sanitation standards in accordance with HACCP and hotel policies.

• Collaborate with the Executive Chef and F&B team to design seasonal or themed dessert menus and special event offerings.

• Ensure all equipment and kitchen tools are well-maintained and used safely.

• Assist in scheduling and performance evaluations of the pastry team.

• Maintain an organized and clean pastry kitchen at all times.

• Uphold the hotel's brand standards and contribute to guest satisfaction by delivering exceptional products.

What we need from you

• Diploma or Degree in Culinary Arts or Pastry & Bakery from a recognized institution.

• Minimum 3-5 years of experience in a similar position within a luxury resort or island hotel.

• Strong knowledge of pastry, bakery, chocolate, and dessert techniques.

• Proven leadership and team management skills.

• Creative flair with an eye for detail and presentation.

• Excellent communication and organizational abilities.

• Ability to work under pressure and adapt to a fast-paced environment.

• Knowledge of food safety and hygiene standards (HACCP certified preferred).
