Garde Manager

The chef in charge of the garde manger is responsible for a variety of cold food items, including:

• Salads: Leafy salads, composed salads, and other cold appetizers.
• Charcuterie: Cured meats, pâtés, and terrines.
• Seafood: Cold preparations like smoked salmon, ceviche, and marinated fish.
• Cold Desserts: Some cold desserts may also fall under their purview.
• Presentation: Creating visually appealing displays of cold dishes is a key aspect of the role.
