Job Description: Hygiene Officer – F&B

Location: Central Kitchen / Restaurant / Production Facility

Position Summary

The Hygiene Officer is responsible for implementing, monitoring, and maintaining food safety, hygiene, and sanitation standards across all F&B operations. The role ensures compliance with local regulations, HACCP procedures, and company policies to guarantee safe food production, handling, storage, and service.

Key Responsibilities

  • Conduct daily inspections of kitchen, production areas, storage rooms, and service areas.
  • Ensure compliance with HACCP, food safety regulations, and internal hygiene standards.
  • Monitor personal hygiene and grooming standards of all food handlers.
  • Implement, update, and monitor HACCP plans and related documentation.
  • Check receiving, storage, handling, and preparation processes to prevent contamination.
  • Verify food temperatures (receiving, cooking, holding, cooling, and storage).
  • Ensure proper labeling, FIFO, expiry checks, and safe food transportation.
  • Conduct regular training for staff on hygiene, sanitation, and food safety guidelines.
  • Educate team members on proper handwashing, PPE use, cleaning procedures, and cross-contamination prevention.
  • Support new staff during orientation on hygiene policies.
  • Monitor cleaning schedules and ensure completion by stewarding and kitchen staff.
  • Verify correct use of chemicals, concentration levels, and cleaning tools.
  • Ensure equipment, utensils, and workstations are sanitized properly.
  • Maintain all hygiene-related documentation, checklists, and corrective action records.
  • Prepare daily/weekly inspection reports and report non-conformities to management.
  • Follow up on corrective actions with responsible departments.
  • Coordinate with pest control contractors and ensure scheduled treatments are completed.
  • Maintain pest control records and monitor for infestations.
  • Ensure preventive measures are implemented.
  • Ensure compliance with Qatar local regulations (MoPH) and food safety standards.
  • Assist during internal and external audits (health inspections, HACCP audits, client audits).
  • Ensure immediate rectification of any violations.

Qualifications & Requirements

  • Bachelor’s degree or diploma in Food Safety, Microbiology, Environmental Health, or related field.
  • Minimum 2–3 years of experience in F&B hygiene or food safety roles.
  • HACCP Level 3 or equivalent certification (mandatory).
  • Strong knowledge of food handling, sanitation, and safety procedures.
  • Familiarity with Qatar food safety laws and inspection requirements.
  • Good communication, observation, and reporting skills.
  • Ability to train staff and implement hygiene programs effectively.
