   Maintain flexibility with any service-related restaurant assistance in the current stores, as needed, if not actively in a new store opening.

   Oversee sourcing food products when Small Cheval specs are out-of-stock; maintain accurate order guides.

   Direct and approve any and all kitchen and operational layout designs.
  </li>
  <li>
   Review and approve any and all kitchen and operational equipment specifications.

   Review and approve any and all custom fabrication drawings for kitchen equipment.

   Review and approve any and all quotes for kitchen equipment.
  </li>

   Review and sign off on kitchen and bar installations.

   Work with the Facilities &amp; Maintenance team to coordinate ongoing repairs for all Small Cheval locations.
