Job Summary:
We are seeking an experienced Stewarding In-Charge to oversee stewarding, hygiene, sanitation, and waste management operations in our central kitchen. The role ensures a clean, safe, and compliant food production environment by supervising stewarding staff, maintaining hygiene standards, controlling chemical usage, and supporting food safety compliance.

Key Responsibilities:

Stewarding & Hygiene Operations

  • Supervise daily stewarding and cleaning activities across production areas, dishwashing zones, storage rooms, and common areas
  • Ensure proper cleaning and sanitization of utensils, equipment, machinery, and workstations
  • Implement and monitor daily, weekly, and monthly cleaning schedules
  • Maintain high hygiene standards in line with food safety regulations
  • Ensure correct segregation and disposal of waste

Team Supervision

  • Lead, train, and supervise stewarding and cleaning staff
  • Ensure compliance with hygiene practices, SOPs, and safety guidelines
  • Conduct on-the-job training for new stewards
  • Monitor staff grooming, uniforms, and personal hygiene

Food Safety & Compliance

  • Ensure compliance with HACCP and local food authority regulations
  • Support internal and external hygiene and sanitation audits
  • Ensure proper cleaning of food-contact surfaces
  • Report hygiene issues, pest activity, or unsafe conditions immediately
  • Assist with pest control coordination and monitoring

Chemical, Equipment & Safety Control

  • Ensure proper storage, labeling, and safe use of cleaning chemicals
  • Train staff on chemical dilution and handling
  • Maintain inventory of cleaning supplies and stewarding equipment
  • Enforce PPE usage and workplace safety practices
  • Report accidents, near misses, and safety hazards

Documentation & Reporting

  • Maintain cleaning schedules, sanitation logs, and chemical usage records
  • Prepare daily and weekly hygiene inspection reports
  • Track corrective actions and follow up on non-compliances
  • Keep all documentation audit-ready

Requirements:

Education

  • High School / Higher Secondary / Diploma
  • Diploma in Hotel Management, Catering, Food Production, or Hygiene Management preferred

Experience

  • 1–3 years’ experience in stewarding or hygiene operations
  • At least 1–2 years in a supervisory or in-charge role
  • Experience in central kitchen, large-scale catering, hotel, or food manufacturing preferred
