ASSISTANT KITCHEN MANAGER

We are looking for a results-driven Assistant Kitchen Manager to support kitchen operations, lead the BOH team, and ensure excellence in food quality, safety, and efficiency.

The Assistant Kitchen Manager supports in overseeing daily back-of-house operations. This role ensures smooth coordination among cooks, senior cooks, and kitchen staff while maintaining high standards of quality, hygiene, and cost control.

Key Responsibilities

  • Assist in managing daily kitchen operations and supervising all BOH team members.
  • Ensure consistent food preparation, portion control, and presentation standards.
  • Monitor food quality and maintain brand consistency across all menu items.
  • Support in scheduling kitchen staff and managing shift performance.
  • Oversee food safety, hygiene, and sanitation compliance (HACCP standards).
  • Assist in inventory control, stock ordering, and minimizing wastage.
  • Train and mentor cooks and junior kitchen staff to enhance performance.
  • Support in achieving food cost targets and operational KPIs.
  • Step in to manage kitchen operations in the absence of the Kitchen Manager.

Experience & Skills Requirements

  • Minimum 6–8 years of experience in kitchen operations, with at least 3 years in a supervisory role (mandatory).
  • Strong leadership and team-management skills.
  • Solid knowledge of kitchen cost control, inventory management, and waste reduction.
  • Excellent understanding of food safety and hygiene regulations.
  • Ability to perform under pressure in a high-volume, fast-paced environment.
  • Strong organizational and communication skills.
  • Detail-oriented with a commitment to quality and consistency.

Educational Requirements

  • Diploma or Degree in Culinary Arts, Food Production, Hospitality Management, or a related field (preferred).
  • HACCP / Food Safety Certification (preferred).

Job Type: Full-time

Pay: Up to RO300.000 per month
