Chef de Partie
Job Location : Dubai, UAE
Key Responsibilities:
Prepare and present sushi and sashimi dishes according to recipes, quality, and presentation standards.
Ensure all ingredients, including fish, seafood, and garnishes, are fresh, properly stored, and handled safely.
Assist in menu planning, daily specials, and portion control.
Maintain hygiene and cleanliness of workstations, tools, and equipment at all times.
Monitor inventory levels and report shortages or spoilage to the Sous Chef/Head Chef.
Train and guide junior kitchen staff on sushi preparation and presentation standards.
Follow health and safety regulations, including proper food handling, storage, and sanitation practices.
Collaborate with the kitchen team to ensure timely and efficient service during operating hours.
Requirements & Skills:
Proven experience as a Sushi Chef or Chef de Partie in a high-volume, high-quality restaurant environment.
Strong knowledge of Japanese cuisine, sushi techniques, and ingredients.
Excellent knife skills and attention to detail.
Ability to work under pressure and meet tight deadlines.
Understanding of food safety, hygiene standards, and proper kitchen practices.
Strong communication and teamwork skills.
Flexibility to work shifts, weekends, and public holidays as required.
Qualifications:
Culinary degree or equivalent professional experience in Japanese cuisine preferred.
Minimum 4 years of experience in sushi preparation and Japanese kitchen operations.
Consistently deliver sushi dishes that meet or exceed guest expectations in taste, quality, and presentation.
Contribute to maintaining a professional, organized, and safe kitchen environment.
Demonstrate initiative, reliability, and adherence to company standards.
