PRODUCTION MANAGER

Key Responsibilities:

• Develop daily/monthly production schedules based on sales forecasts and inventory levels.
• Oversee salt, dry mixes, spice cleaning, grinding, roasting, blending, dessert and packaging operations.
• Ensure consistent batch-wise quality and adherence to defined specifications.
• Maintain production records, batch manufacturing records (BMR) and traceability logs.
• Ensure strict adherence to FSSC, HACCP, ISO 22000, and other food safety standards.
• Support external audits and inspections (FSSC, ISO, third-party audits).
• Implement and monitor GMP (Good Manufacturing Practices) and GHP (Good Hygiene Practices).
• Coordinate with Quality Assurance to monitor moisture levels, microbial parameters and sensory characteristics.
• Lead and supervise line operators, technicians and production supervisors.
• Coordinate with the maintenance team to ensure preventive maintenance of grinding, mixing and packaging machinery.
• Conduct regular training on food safety, hygiene and equipment handling.
• Foster a high-performance culture through coaching and performance monitoring.
• Identify opportunities for process automation and lean manufacturing.
• Control the cost, control wastage, overuse of raw materials and machine downtime.
• Drive continuous improvement initiatives 5S & TPM (Total Productive Maintenance).
• Ensure compliance with statutory standards related to labor, safety and food processing.
• Raise timely requisitions for spare parts or breakdown repairs.

Qualifications & Experience:

• Education: Masters / B.Tech / B.E. in Food Technology / Mechanical / Production Engineering; MBA is an advantage.
• Experience: 10–12 years in food manufacturing (minimum 5 years in Recipe mixes, dry spices, desserts production & blending units).
• Knowledge: Familiarity with spice sterilization techniques (steam, dry heat), volatile oil content management, aroma retention methods and FSSAP labeling norms.
