Job Title: Head Chef – Pastry & Bakery

Job Summary:

The Head Chef – Pastry & Bakery is responsible for overseeing the entire pastry and bakery operations, including menu development, production, presentation, and quality control. This role requires strong leadership, innovation, and technical expertise to ensure consistent delivery of high-quality baked goods and desserts, while maintaining cost efficiency and upholding hygiene and safety standards.

Key Responsibilities:

  • Lead, supervise, and manage the pastry and bakery team to ensure smooth daily operations.
  • Develop and innovate menus, seasonal specials, and signature items in line with market trends and guest preferences.
  • Oversee production of bread, cakes, pastries, desserts, and specialty items, ensuring quality, consistency, and presentation standards are met.
  • Manage inventory, control food costs, and monitor wastage to achieve profitability targets.
  • Ensure compliance with food safety, hygiene, and sanitation regulations at all times.
  • Train, coach, and mentor junior chefs and staff, fostering a culture of excellence and creativity.
  • Collaborate with the Executive Chef and F&B team to design and implement promotional concepts and new product launches.
  • Monitor equipment maintenance and coordinate with relevant departments for repairs or replacements.
  • Maintain detailed records of recipes, portion control, and production methods for consistency.

Qualifications & Requirements:

  • Minimum 10 years of professional experience in pastry and bakery, with at least 3–5 years in a leadership role.
  • Degree/Diploma in Culinary Arts, specializing in Pastry & Bakery, from a recognized institution.
  • Proven expertise in modern and classical pastry and bakery techniques.
  • Strong knowledge of international pastry trends, artisan bread, and plated desserts.
  • Excellent leadership, communication, and organizational skills.
  • Ability to work under pressure in a fast-paced environment while maintaining high standards.
  • Strong financial acumen in cost control and inventory management.
  • Creativity, attention to detail, and passion for innovation in pastry and bakery.
