Ghassan Aboud Holding is an international conglomerate engaged in several key business sectors including Automotive, Retail, FMCG, Hospitality, Logistics, Healthcare, and Digital Marketplaces. We are currently seeking a Production & Operations Manager for our Industrial bakery business in Dubai.

Purpose of the position

The Bakery Production & Operations Manager is responsible for overseeing the end-to-end production and operational performance of the Flour Country (Industrial Bakery under Ghassan Aboud Holdings). This role ensures efficient, cost-effective, and high-quality production aligned with the Group’s standards for food safety, operational excellence, and profitability.

This position plays a key leadership role in managing people, processes, and plant performance to meet customer demand while maintaining safety, quality, and sustainability standards.

Key Responsibilities

Production Operations

Plan, lead, and control bakery production activities to meet daily and monthly output targets.

Ensure adherence to recipes, standard operating procedures, and product specifications for consistent quality.

Coordinate with planning and supply chain teams for raw material availability, packaging, and production scheduling.

Monitor plant efficiency, minimize downtime, and ensure optimal utilization of resources and machinery.

Supervise production team leaders, shift supervisors, and operators to achieve line productivity targets.

2. Quality & Food Safety

Enforce strict compliance with HACCP, ISO 22000, and other Group food safety standards.

Partner with QA/QC to ensure hygiene, traceability, and product consistency across all production lines.

Lead investigations into any product deviations, implement preventive and corrective actions, and always ensure audit readiness.

3. Operational Efficiency & Cost Control

Develop and manage the annual production budget, focusing on cost per kg, yield optimization, and waste reduction.

Track and analyze production KPIs (output, wastage, downtime, energy use) to drive efficiency improvements.

Implement lean manufacturing principles and 5S practices to enhance operational performance.

4. People Leadership

Lead and motivate the production workforce to foster accountability, teamwork, and continuous improvement.

Identify skill gaps and coordinate with HR/L&D for training programs to upskill line staff and supervisors.

Maintain a safe and compliant working environment in line with Group EHS standards.

5. Continuous Improvement & Innovation

Identify and implement automation opportunities and process improvements to boost productivity and reduce manual dependency.

Support R&D and NPD teams in trialing new recipes, packaging formats, and production technologies.

Champion innovation in baking techniques, process flow, and resource optimization.

6. Coordination & Reporting

Liaise with Procurement, Maintenance, Logistics, QA, and Sales teams to ensure seamless operational flow.

Prepare and present periodic production performance reports and cost analyses to senior management.

Participate in strategic business reviews and planning sessions for capacity expansion or new product lines.

Qualifications & Experience

Bachelor’s degree in food technology, Industrial Engineering, or Operations Management.

Minimum 8–10 years of experience in an industrial bakery or large-scale food manufacturing environment, with at least 3 years in a managerial role.

Strong exposure to automated bakery lines, frozen dough production, and high-capacity oven technologies.

Proficient in ERP systems and data-driven production reporting.

Demonstrated leadership, analytical, and problem-solving skills.
