<div><ul><li>&middot; Lead daily restaurant operations and ensure high service standards in line with hotel procedures and brand requirements.</li><li>&middot; Represent the outlet in daily F&amp;B meetings and other operational meetings as required.</li><li>&middot; Conduct daily team briefings to review service standards, guest feedback, promotions, and operational updates.</li><li>&middot; Prepare staff schedules based on forecasts, business levels, and special events.</li><li>&middot; Monitor staff attendance, performance, grooming, and conduct regular evaluations.</li><li>&middot; Ensure all team members comply with InterContinental grooming and service standards.</li><li>&middot; Oversee sanitation, hygiene, and cleanliness in coordination with Housekeeping and Stewarding.</li><li>&middot; Ensure service stations, bar areas, and operating equipment are properly maintained and stocked at par levels.</li><li>&middot; Control beverage, cigar, and cigarette stocks in line with hotel procedures.</li><li>&middot; Monitor casual labor and overtime to ensure labor costs remain within the approved budget.</li><li>&middot; Maintain strong guest engagement by welcoming, seating, and thanking guests upon departure.</li><li>&middot; Handle guest feedback and complaints professionally and implement corrective actions when necessary.</li><li>&middot; Maintain updated records of regular and VIP guest preferences to enhance personalized service.</li><li>&middot; Promote upselling initiatives to maximize revenue and achieve sales targets.</li><li>&middot; Support and organize outlet promotions and marketing activities to drive business.</li></ul>

 A little taste of your day-to-day
 
 
 
 Every day is different, but you&rsquo;ll mostly be:
 
 
 Leading the development and production of all chocolate-based items including bonbons, pralines, truffles, showpieces, garnishes, and plated dessert components.
 
 
 Creating seasonal and signature chocolate collections tailored to events, promotions, and specialty menus.
 
 
 Producing high-quality pastries, cakes, and desserts with a strong focus on chocolate techniques, tempering, molding, and sculpting.
 
 
 Designing and executing chocolate showpieces for buffets, banquets, and special events.
 
 
 Training, guiding, and mentoring junior pastry chefs on chocolate handling, techniques, and artistic presentation.
 
 
 Ensuring that all recipes, production methods, and presentations meet the highest standards of quality, consistency, and creativity.
 
 
 Managing ingredient inventory, sourcing premium chocolates and couvertures, and ensuring proper storage and temperature control.
 
 
 Maintaining impeccable hygiene, sanitation practices, and HACCP compliance in the pastry and chocolate production areas.
 
 
 Collaborating with the Executive Pastry Chef to create innovative dessert concepts and elevate the pastry identity of the hotel.
 
 
 
 What We Need From You
 
 
 
 Diploma or certification in Pastry Arts, Chocolatier specialization, or Culinary Arts.
 
 
 
 Minimum 3&ndash;5 years of experience as a Chocolatier or Pastry Chef in a luxury hotel, fine-dining restaurant, boutique chocolatier, or high-end patisserie.
 
 
 
 Advanced skills in chocolate tempering, sculpting, mold work, decoration, and artistic showpiece creation.
 
 
 Strong knowledge of modern pastry techniques, textures, and flavor pairing principles.
 
 
 Exceptional attention to detail, creativity, and artistic presentation skills.
 
 
 Ability to train and inspire a team while maintaining high production standards.
 
 
 Strong organisational skills and the ability to multitask in a fast-paced kitchen environment.
 
 
 Must speak basic English; additional languages may be preferred.
 
 
 Flexibility to work varied shifts, weekends, and peak production periods.
