What you will have an opportunity to do:
We are looking for a leader and someone passionate about the culinary arts to join our Culinary team as a Cook. This individual must have extensive experience working in a high-volume professional kitchen and be a college graduate in the culinary arts. This individual must be creative, motivated, and a passionate hands-on leader in the kitchen! Successful candidates for this role will have a proven track record of work with creative menus which reflect seasonal availability based on the concept of the restaurant, responds in a professional and courteous manner to guests and team, and enjoys being a teacher of the culinary arts supporting their team both personally and professionally. 
The Cook will assist with planning and execution of the daily production, preparation, and presentation of all food for the hotel in a safe, sanitary work environment which conforms to all standards and regulations and achieves profitable competitive quality products.

Your Role:<ul><li>
You will act in the absence of the executive chef to complete the daily ordering using the current par levels for all outlets, employee cafeteria and banquets.</li><li>
You may be required to perform any function within the culinary department (cook, steward etc)</li><li>
You will conduct daily walk throughs of the kitchen, make recommendations for corrections, repairs, cleanliness concerns and improvements if needed.</li><li>
You will conduct daily meetings with the team to ensure their preparation, communicating all pertinent information</li><li>
You will attend weekly F&amp;B meetings, BEO meetings, leadership meetings, monthly safety meeting and represent the culinary team</li><li>
You will be the example that the culinary team follows</li><li>
You will manage the finances of the department, analyze, and control costs and manage the budget to achieve a profitable operation</li><li>
You will have thorough knowledge of food allergens and handles any guest with food allergies with a high sense of urgency</li><li>
You will work with the culinary team to ensure prep sheets are updated and being properly used daily</li><li>
You will guide the nightly cleaning of all kitchen areas, follow up with pm stewarding crew to ensure dish area is clean and organized for the following days service</li><li>
You will assist the Executive Chef in the creation, costing, and implementation of (seasonal) menus and special menus</li></ul>
What are we looking for?<ul><li>
Must be able to work long hours including weekends and holidays.</li><li>
Have a 3+ years&rsquo; experience as a cook in a high volume professional kitchen</li><li>
Must have basic allergy knowledge</li><li>
Must have full knowledge of correct cooking temperatures of all vegetables and proteins, must be able to provide cutting tools needed to perform job as well as a calibrated food grade thermometer.</li><li>
Must have full knowledge of the state&rsquo;s health codes as well as the eco sure food safety and health report</li><li>
Active Food handler&rsquo;s certification</li><li>
Requires strong organizational skills</li><li>
Must be able to work independently</li><li>
Able to be on your feet for long periods of time</li><li>
Able to lift at least 50 pounds</li><li>
At least 21 years of age</li><li>
Have a desire to exceed expectations</li><li>

About the Role
Four Seasons Hotel Miami is looking for Part Time - Overnight Cook who shares a passion for excellence and who infuses enthusiasm into everything they do. Our employees have the opportunity to shape our guests experience by providing exceptional knowledge and service in support of our world-renowned organization.
Responsibilities
<ul><li>Prepare food items according to banquet event orders of consistent quality following recipe cards, as well as production, portion, and presentation standards; complete mis en place and set-up station for breakfast, lunch, and/or dinner service.
</li><li>Start food items that are prepared ahead of time, making sure not prepare beyond estimated needs.
</li><li>Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.
</li><li>Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures; check pars for shift use, determine necessary preparation, freezer pull and line set up; note any out-of-stock items or possible shortages; return all food items not used to designated storage areas, being sure to cover/date all perishables; assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per policies.
</li><li>Comply with Four Seasons&rsquo; Category One and Category Two Work Rules and Standards of Conduct as set forth in EmPact.
</li><li>Work harmoniously and professionally with co-workers and supervisors.
</li></ul>Preferred Qualifications and Skills
<ul><li>Must be able to work all shifts including, overnight, weekends, and holidays.
</li><li>High school education, cooking school or culinary institute education or equivalent experience.
</li><li>Minimum two years culinary or related work experience.
</li><li>Advanced culinary knowledge is preferred for this position.
</li><li>Ability to operate, maintain and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, flat top grill. Proficient knife skills and ability to multi-task.
</li><li>Scheduled days and times may vary based on need.
</li><li>Position regularly involves lifting food cases and materials weighing up to 70 pounds pushing and pulling, lifting, carrying carts is required.
</li><li>Regular bending to lift items and supplies.
</li><li>80% mobility during the shift, 10% continuous standing.
